Championship Sunday!
Sunday funday means football and food. With the first major snow fall this weekend, it was the perfect day to cook and watch the game!
Empanadas, known as turnovers, are very easy to make. You can either attempt to give yourself a heart attack by frying them, or bake them like I did today. You can fill them with whatever you are in the mood for. It is very popular to have seafood filled ones in Puerto Rico or you can put an american spin to it and do pizza ones. Today, Becca and I made meat and cheese ones.
Becca put together an amazing Corn Jalapeño Dip recipe she found while scrolling through Pinterest. It was super simple to make, combining sweet corn, jalapeños, cream cheese, mozzarella, parmesan, basil, cayenne pepper, and crumbled bacon. To. Die. For. When she took it out of the oven we attacked it with a bag of Tostitos tortillas chips. This appetizer was spot on for our game day. You can find the recipe here.
