Aita's Arroz con Consomé
If you have been following my blog you should know by now that Aíto and Aíta are a big part of my life. There is probably one other person that cooks better than Aíta's and that is my dad. Growing up, there was no candy, sodas or unhealthy food inside the cabinets at home. Both my grandmother and my father have spoiled me with their cooking. Definitely one of the things I miss the most about not living close to home.
Towards the end of my vacation last week I stopped by my Aíta's house and caught her cooking Arroz con Consomé.
Ingredients:
1 cup of rice
1 1/2 cups of Campbell's Beef Broth
1 chopped onion
1 tablespoon of butter
1 Teaspoon olive oil
2-3 tablespoons grated parmesan cheese (to taste)
1 or 2 cilantro leaves (optional)
Heat the stove on medium high. Add the butter and oil. Add the onions and sauté. Add the rice and mix it all together. Add the broth. Let it cook on medium temperature until the broth is absorbed. Stir the rice with a folding motion and put the lid on. You can add the parmesan cheese and cilantro leaves and mix it together before serving.
